We have known the the little one reacted badly to wheat since she was around 2. We diagnosed ourselves by removing wheat from her diet. Within a few days her symptoms went away. We eventually saw a doctor and went to the dietician at the hospital. To get a proper Coeliac diagnosis, they would need to do all the horrible tests which would require her to be back on wheat for 4 weeks.
We decided that we would leave that until she was older – and meanwhile hope that she grows out of it. So far she’s showing no signs unfortunately.
So meanwhile I have become a master of reading ingredients and also making our own Gluten Free products. As a result I have now gathered a set of recipes that, after a lot of trial and error, work pretty well. I’m also constantly discovering and developing new ones.
After the success of my Slow Cooker recipe post I figured I would do a Gluten Free one too.
