The little one was asking me to make a SpongeBob cake and the hubby wanted a sponge cake. So I adapted one of Phil Vickery’s cupcake recipes to suit both needs.
Ingredients
175g butter
175g caster sugar
175g GF plain flour
1 tsp vanilla
1.5 tsp baking powder
0.5 tsp Xanthan Gum
2 medium eggs beaten (I accidentally used 3 and it was fine!)
3 tbsp milk
Recipe
Beat the butter, sugar and vanilla together. I bunged them all together in a mixer.
Mix the flour, xanthan gum and baking powder
Add the beaten eggs and flour in alternating small quantities to the butter mix until full combined. Again I did this into the mix in the mixer. Add a little milk until the mixture drops off a spoon easily.
Stick in the baking container of your choice and cook on about 180 for 15-20 minutes.
Turn it out onto a rack to cool.
It doesn’t rise much but it is super tasty!
And this is the mini SpongeBob Squarepants cake for the little one.
Needless to say she scoffed him up shortly after I took the photo!
